Hi guys! I cannot believe it is already week 7 of blogging. Time has definitely gone by fast this genius hour and to say the absolute least, I am still terrified to go to college this fall. I would definitely not call myself Gordon Ramsay, so the idea of my mom not being there to fix me lunch while I'm at the dorms frightens me. I do have to say my cooking skills have improved. I have learned to cook and prepare some of my favorites meals, with the help of recipes and my mom. However, when I do decide to cook these meals again, I know I'm going to have to revert back to the recipes and instructions for help. It is safe to say that you cannot be a professional grilled cheese maker if you have only made one...

This week I decided to make beef tacos! If you have been keeping up with my blogs in the past, you know I have already made chicken tacos a few weeks ago. That's okay because this proves my theory that you have to cook things more than once to get better at it. And my proof to this logic is round 2 of tacos were much better! This time I felt like I had a better feeling and understanding of what I was doing. Plus, I am running out of ideas on what to make because I am literally the pickiest eater. So you might start to see a few of the 5 meals I eat be repeated during this genius hour.
One of the biggest challenges I have faced this genius hour is finding recipes that suits the dorm life. As you know, dorms don't typically have a 4 burner stove with an oven. In fact, certain schools do not even allow microwaves in the rooms, so this makes my job of finding recipes tricky. I was originally basing my project on finding meals that I could make next year on campus in order to save money and prevent starvation, but I have readjusted my goal to both dorm and apartment life!
