Cooking 2.2

     Welcome back! This week I challenged myself to step out if my comfort zone and prepare a meal for my family. This required a little more time and effort then the sandwich I made last week. Cooking a meal for others will help me next year when my college roommates need a quick bite after class. 

    This week I made homemade chicken fiesta. This is my mom’s personal recipe and one of my favorite meal when it's chilly outside. We typically have this dish on football Sunday's with the fam. If you never had or heard of this delicious meal, it is practically just a chicken stew. Eww stew... I know that sounds gross, but coming from one of the most pickiest eaters you'll ever meet, it's actually quite tasty. This dish contains shredded chicken with seasoning/spices, tortilla chips, and cheese. 

    Making dinner for my family was a bit of a struggle and required more of my time then expected. Preparing the chicken to put in the crockpot was my biggest challenge this week. I wasn't exactly sure how to shred and season the meat, so I had to ask my mom for help and guidance... know I know why she isn't the biggest fan of cooking. After I got the chicken in the crockpot, it was smooth sailing from there. I left the chicken in the crockpot for four hours on high and checked/stirred it occasionally. I think this will be a great meal for college not only because it is made in a crockpot, but also there is plenty of leftovers!

  1. Just reading this made me hungry, I'm also a very picky eater and honestly this sounds like something I would eat. This will really help you in college, cooking is one thing that everyone should learn how to do at some point in their lives. Keep up the good work!
